1. Gather your materials. This includes refractory bricks, firebricks, cement and mortar, a metal pipe or tube, grout, and a thermometer.
2. Draw a plan of the pizza oven. Decide the size, shape and number of bricks you’ll need.
3. Measure and mark the area where the pizza oven will be located.
4. Lay the base layer of firebricks. Use mortar to hold them together.
5. Place the metal pipe or tube in the center of the oven for the chimney.
6. Build up the walls. Alternate refractory bricks and firebricks. Make sure to use mortar between each course.
7. Create the arch at the entrance of the oven. Use additional firebricks to cover the arch.
8. Smooth and level out the mortar between the bricks. Apply the grout and let it set up.
9. Install the thermometer. Seal it in with mortar.
10. Light the oven and test the temperature.
